Smoked Mackerel and Mushroom Sandwich with BUGA’s Mango Chutney
Ingredients:
– 1 mackerel fillet
– Allspice
– Black pepper
– Green pepper
– Pink pepper
– Chipotle pepper
– 3 shallots
– Chives
– 1 onion
– 1 tomato
– Mayonnaise
– Focaccia bread
– Salt
– Mushrooms (sliced)
– BUGA’s Mango Chutney
Instructions:
– Preheat your smoker to 80°C (176°F).
– Season the mackerel fillet with a pinch of allspice, black pepper, green pepper, pink pepper, and chipotle pepper on both sides.
– Place the seasoned mackerel fillet in the smoker and let it smoke at 80°C (176°F) for about 1.5 hours until it’s cooked through and infused with smoky flavor.
– Finely chop 1 shallot, a small bunch of chives, and 1/4 of the onion.
– Mix the chopped shallot, chives, and onion with a generous spoonful of mayonnaise to create a flavorful spread. Set aside.
– Thinly slice the remaining onion.
– Slice the tomato into rounds.
– Optional: If you have green, pink, or chipotle peppers in equal parts, crush or grind them together to create a mixed pepper blend.
– In a separate pan, heat a bit of oil over medium heat.
– Add the sliced mushrooms and sauté them until they’re golden brown and cooked through. Set aside.
– Cut the focaccia bread in half horizontally.
– Toast both halves of the focaccia until they’re lightly crispy. Heat a bit of oil over medium heat in a separate pan
– On the bottom half of the toasted focaccia, spread a generous layer of the flavored mayonnaise mixture you prepared earlier.
– Arrange the sliced tomato and onion on top of the mayo layer. Sprinkle a pinch of the mixed pepper blend (or just black pepper if preferred) over the veggies.
– Place the smoked mackerel fillet on top of the vegetable layer.
– Arrange the sautéed mushrooms on top of the mackerel.
– Generously spread BUGA’s Mango Chutney on the top half of the toasted focaccia.
– Gently place the top half of the focaccia with chutney over the smoked mackerel, mushroom, and vegetable layers, creating a sandwich.
